in Tel Aviv, Israel owned by the brothers Gabriele and Oren Raccah. My consultancy was based on the launch of a semi-industrial bakery by introducing types of Italian bread, by adopting craft production with long-fermenting yeasts to add unique and unmistakable flavours and tastes of typical Italian products to fresh bread .
